The 8th annual New York City Wine & Food Festival may not be coming around until this fall (October 15 through 18, to be exact), but we're prepping already. That's because the fest is a three-day stretch of megawatt celebrity chefs, intimate dinners, wine pairings and tastings, and making a game plan to fit in every last bite is essential. To get you started, here are eight events to put on your NYCWFF to-do list.

A Dinner with Enrique Olvera & Jordi Roca
As part of the Bank of America series, Mexican powerhouse Enrique Olvera (Cosme, Mexico City's Pujol) will welcome Spanish pastry pro Jordi Roca into the Cosme kitchen for one night only, turning out innovative riffs on traditional Mexican and Spanish cooking. Guests will go home with a copy of Olvera's latest cookbook, Mexico from the Inside Out.

The Art of Sushi with Chef Daisuke Nakazawa at De Gustibus
Wannabe sushi masters can learn under one of New York's top toques, Daisuke Nakazawa of critical darling Sushi Nakazawa, at this demonstration and Q&A.

Sweet Masquerade hosted by Dominique Ansel
Inside the Four Seasons' Pool Room, Cronut whiz Dominique Ansel will host a dessert-fueled masquerade with flowing champagne, cocktails and, naturally, inventive sweets. Set to attend are the team behind OddFellows Ice Cream Co., Locanda Verde's Kierin Baldwin and Miro Uskokovic of Gramercy Tavern

The Art of Tiki: A Cocktail Showdown hosted by Emeril Lagasse
Join celebrity chef Emeril Lagasse for a tasting of tiki cocktails from some of the country's best bartenders, including local drink slingers Sophia Present of End of the Century Bar and Matthew Belanger of Donna

Celebrity Cruises Ramen Party Hosted by Chrissy Teigen and J. Kenji Lopez-Alt
Slurp your way through some of the best ramen bowls in New York, including steaming numbers from Yuji Ramen, Mu Ramen and Ivan Ramen

A Dinner with Charles Phan & Justin Smillie
Charles Phan of San Francisco's the Slanted Door and Justin Smilie of New York's own Upland join forces for this Vietnamese-Italian hybrid dinner.

Roast Chicken Master Class hosted by Jonathan Waxman
Before reviving his '80s favorite Jams in NYC, "Top Chef Master" Jonathan Waxman (Barbuto) will give home cooks a hands-on how-to for making his legendary roast chicken.

Midnight Jazz Breakfast hosted by Rev Run and Justine Simmons
Fittingly set at Harlem's jazz-soundtracked the Cecil, this decadent breakfast spread will be hosted at the witching hour by Run–D.M.C. legend Rev Run and wife Justin Simmons.
