This historic watering hole, founded by Giuseppe Cipriani in 1931, has changed little since the days when Ernest Hemingway came here to work on his next hangover… except for the prices and the numbers of tourists. But despite the crush, a Bellini (peach juice and sparkling wine) at the bar is as much a part of the Venetian experience as a gondola ride (and at €15 far cheaper). At mealtimes, diners enjoy Venetian-themed international comfort food at steep prices (€120-plus for three courses). Stick with a Bellini, and don't even think of coming in here wearing shorts or ordering a spritz.
