There's a type of bubble that arrived to break the rules of toasting: Pét-Nat wines. Natural, fresh, and unfiltered, they are conquering the most curious palates. "Pét-Nat is short for Pétillant Naturel, which means natural sparkling, finely and softly carbonated," explains Mendoza enologist Constanza Gaitieri.
Unlike the Champagne or Charmat methods, these wines are made using the ancestral method: a single fermentation that finishes in the bottle, without additives or corrections. "It's going back to the origin of wine with bubbles," summarizes Gaitieri, creator of Malpensado Sparkling Wines, a brand that produces high-end and limited-edition sparkling wines.

Pét-Nat Wines: Sparkling Wines Drunk Just as They Ferment
Pét-Nats ferment in the bottle and are not filtered, which is why they often have a cloudy appearance, soft bubbles, and a very fresh profile. Some labels undergo disgorgement, a process that removes sediments and results in visually cleaner wines.
Another peculiarity is the crown cap, which retains carbon dioxide without risk of leakage, unlike the classic cork. Additionally, their alcohol content is low (between 10° and 11°), as the grapes are harvested early, when they have less sugar and more fresh fruit.

And so you know which one to choose for your next drink, Gaitieri recommends 10 Mendoza labels that perfectly capture the spirit of this style.

1. Galileo Viñedo Lejano by Galileo Wines
Galileo Wines
This sparkling wine is a blend of 70% Chardonnay and 30% Pinot Noir, made with grapes harvested manually from vineyards located in the Ugarteche area (Luján de Cuyo), meaning it comes from the Mendoza plains, surrounded by native flora and fauna.
Small, limited, and unrepeatable batches were produced. The suggestion is to pair this Pét-Nat with tapas, seafood, sourdough pizzas, and even with a fruit dessert like strawberries and cream; at a picnic or on a chill afternoon with friends on the terrace.
The tip: It doesn't look cloudy because after fermentation, the lees formed during gas production were swept away.
2. Nox Burbujas by Canopus
Canopus
This 100% Malbec sparkling wine comes from El Cepillo, an area in the San Carlos department, Uco Valley. It's drinkable and versatile, as it pairs very well as an appetizer to start a meal and even to finish with something sweet.
It's light and fresh, just as its creator Gabriel Dvoskin intended. The first vintage of this Pét-Nat was 2021, and the limited batch of the new and promising harvest will be released very soon.
