Those who are fortunate enough to have traveled to the Basque region in northern Spain are probably familiar with hearing “¡Txotx!” (pronounced “Choach”) echoing loudly throughout cider houses and bars in late January. To the locals, the exclamation signifies that a new delicious barrel of delicate, fizzy and sour cider - known as sidra - is being tapped. With outstretched arms, the locals let the sidra splash into their tumblers from a considerable distance with a special glass vessel called a porrón. In addition to creating an impressive sight to see, pouring the cider with the porrón helps agitate the bubbles of the cider’s low carbonation.

To bring this tradition to Houston and spread the word of these delicious ciders, on the first day of sidra season from January 20-22, we will offer a selection of some of the Basque region’s signature styles. The festivities will continue all weekend with Public Services Wine & Whisky and Camerata at Paulie's also featuring sidra, txakoli and wines from Rioja Alavesa.
