The Kitches Brothers keep the kebab war fresh with Carmel

Perhaps you were preoccupied braving the Pasta Basta line this Friday morning at the Shuk. But once you sit down, pasta in hand, and peer out the glass window across the alleyway, you'll discover the subtle, newest addition to the bustling corner: Carmel.
 
Brothers Eyal and Shei Kitches, who were the first to bring buns to Israel six years ago when they opened The Bun, just opened a meat stall  serving up Turkish kebabs, chicken machamer, and all that juicy jazz inside charcoal-grilled pitas. It's certainly not difficult to locate the stand, as it sits right next to The Bun on Hillel Street at the entrance to the Carmel Market, creating a rather pleasant sequence of fast food options.

The Kitches explain that the meat they use is purely Israeli, coming from quality cattle whose small herds are reared at the foot of Mount Tabor. Despite promise of a seating area sometime soon, in the meantime you will have to eat standing up as you keep that tahina from dripping. When the kebabs of Shmuel, M25, and even Jasmino are not far away, the Kitches brothers are going to have to put up quite the fight. There will be blood...or at least, amba.
