Make your own vegan bean burgers and more via Village Greens

With the massive growth in burger restaurants it's good to see that they all cater for the veggies. Indeed there are some fantastic vegetarian meals available in the city, and vegan food is also becoming much more popular.

Now you can buy a pocket sized book with 100 easy vegan recipes from Village Greens in Prestwich, where you can also get any ingredients you might need. The book caters for all parts of the day, from breakfast to supper and everything in between, and Jane Hughes who created some of them has this delicious bean burger as an alternative to meat stuffed baps.

Lunchtime bean burgers - serves 4


Ingredients
1 tbsp sunflower oil, plus extra for brushing
1 onion finely chopped
1 garlic clove finely chopped
1 tsp ground coriander
1 tsp ground cumin
115g/4oz white mushrooms finely chopped
425g/15oz canned barlotti or red kidney beans, drained and rinsed
2tbsp chopped fresh flat leaf parsley
plain flour for dusting
salt and pepper

Add vegan hamburger rolls and salad to serve.

Method
1. Heat the oil in a heavy-based frying pan over a medium heat. Add the onion and cook, stirring frequently, for 5 minutes or until it has softened. Add the garlic, coriander and cumin and cook, stirring, for another minute. Add the mushrooms  and cook for a further for 4-5 minutes, stirring frequently, until all of the liquid has evaporated. Transfer to a bowl.

2. Put the beans in a small bowl and mash with a fork. Stir this into the mushroom mixture, add the parsley and season with salt & pepper to taste.

3. Preheat the grill to medium-high. Divide the mixture into 4 portions, dust lightly with flour and shape them. Brush with the oil and grill them for 4-5 minutes each side. Serve with the buns and salad.
