Christian Plotczyk goes back into the fire. The man behind the raw bar Salt & Brine has expanded his market offerings to include a Chinese kitchen called La Cocina China, conceived as an homage to his time as executive chef at some of South Beach’s trendiest Asian restaurants of yesteryear. The stellar bites from the fondly remembered China Grill, Pacific Time and Asia de Cuba come together on this menu, such as Plotczyk’s own improvised hot-and-sour fish in a vibrant, electric-orange sauce.
