How can you guarantee your pasta is made fresh? At Via Emilia 9, you see the can see the dough being pulled and kneaded by kitchen staff from the restaurant’s window. Most dishes served at the cozy Italian spot follow suit: house-made sausages, made-from-scratch sauces and hand-pulled cheeses. Portions are small and expensive (about $20 for a restrained bowl of pasta), but lunch is always 50 percent off, which is more than what you’ll get at other South Beach restaurants.
