Connect with old friends and make new ones. Pick up registration and orientation information. See some cool stuff, have a light bite and adult beverages, then head out to the French Quarter. Saturday March 21: 2 classes offered twice in an AM A/B and PM B/A format. Class A: Mike Ebert from Firedancer Coffee Consultants leads CB237 Coffee Buying Strategies. This class is a primer for roasters and importers to determine a purchasing strategy. It covers: usage, planning, buying, blending, bag sizes, shrink, spreads, carry charges, fixing prices, different types of contracts for different purchases and the pros and cons of each. This is part of the Coffee Buyer Level 1 program. Class B: Ricardo Pereira from Ally Brazilian Coffee Merchants leads Coffee Taster Calibration. This class is a practice test of the most critical and frequently-done skills of a coffee taster. You will be correctly performing the SCAA Cupping process on one table according to the protocol, evaluating coffee to Specialty Grade Scoring Standards, and calibrating to your peers. This class is good practice for Q Grade Calibration or for understanding how to calibrate with your own company’s cuppers. Lunch, dinner and beverages included. Sunday March 22: 1 class offered once in the morning. Class C: Todd Arnette from Williamsburg Coffee and Jim Brady from GMCR lead a cupping and tasting class on the impact of varying the airflow velocity on cup quality. This class will explore and compare multiple roast profiles manipulating one key variable at a time. We will objectively measure the coffee with the tools of the SCAA Gold Cup Technician Certificate Program and Coffee Taster Certificate Program. Cuppings and tastings will be performed in a “Difference From Control” and “Ranking Preference” format. Brunch provided.
