If you're the kind of person who scopes out the restaurant menu days before you go out to eat, you're going to want to tune in to a new original Time Out video series that takes you behind the scenes of Time Out Market Dubai, our 43,000-square-foot culinary playground at Souk Al Bahar.

Local Legends debuts today with an in-depth look at just two of the Market's 17 kitchens, all of which are entirely curated by local Time Out editors. (Not a bad gig, eh?) The first episode follows hosts Reema Rahman and Tom Oxtoby as they taste their way through the menus at folly Workshop and Vietnamese Foodies.

When they're not obsessing over the top-notch eats, Rahman and Oxtoby introduce viewers to the chefs behind each concept – so expect to hear about their inspiration, techniques and best-selling dishes. And did we mention the food? In the debut episode, you'll get a delicious look at 24-hour braised sticky ribs, golden-brown battered haddock, crispy coconut prawns and a massive bowl of steamy seafood pho.
