Whiskey neat makes any meal complete, and Swank and Swine’s paired whiskey dinner this June is no exception. Hosting a three-course meal with the Portland-based Big Bottom Distilling on Thursday, June 16th at 6pm. April’s Indio Spirits Distillery & Tasting Room whiskey dinner sold out early on, prompting a second seating for those who hadn’t booked quickly enough. Executive Chefs Kevin Kennedy and Joseph Maddocks have once again put together a delicious menu focused on showcasing three of Big Bottom’s spirits served neat.

Guests will admire the beautifully presented gravlax plate complete with pumpernickel, bacon fat, dill tartar, and Danish pickle, building each bite to complement the Barlow Trail American Blended Whiskey. Next, the rack of wild boar with a port wine reduction offers an optional hands-on experience, but the fork will still be helpful for the smoked rosemary marble potatoes and seared mustard greens, all spiced up by the pour of Delta Rye. Finishing off the meal with the banana bread pudding and vanilla bean ice cream, no one will complain about the whiskey sauce that pairs so delectably well with the Port Cask Finish on the Barlow Trail American Blended Whiskey.
