We are excited to be collaborating with Chef Vince Nguyen of JolieLaide for a special dinner on May 4th.

Vince began his career at two Michelin starred Providence in Los Angeles. After two years in LA he moved to Portland where he worked under Matt Lightner at Castagna, eventually being promoted to sous chef. Vince then moved to Australia to work with Dan Hunter, currently chef at Brae, at The Royal Mail Hotel. It was during the year spent in Australia, Vince grew a passion for farming and developed his vegetable forward approach to cuisine. Drawn home, Vince returned to California, where he was appointed sous chef at COI in San Francisco, working alongside Daniel Patterson for two years. Vince became enamored with the potential of Oregon wine country and has since moved back to Portland in pursuit of his dream to open a farm-restaurant in the Willamette Valley. His project, Jolie Laide, puts vegetables at the forefront, highlighting the daily progression of the product, and often enriching these with uncommon forms of protein. More than a reflection of the season, Jolie Laide is a reflection of the moment, now.
