Hailing from Osaka, Michelin-starred restaurant Chugokusai S. Sawada recently relocated to Marunouchi from its first Tokyo location in Nishi-Azabu.
Chef-owner Shuhei Sawada learned the essence of Chinese cuisine at the famed Cantonese restaurant Fook Lam Moon in Hong Kong. He combines traditional Chinese dishes with Japanese ingredients, resulting in delicacies such as crispy chicken slowly cooked over low heat, foie gras flavoured with Shaoxing wine and served in a bun, and chilled rice noodles with seasonal ingredients such as tomatoes and caviar.
