Yamami has made a name for itself by serving unconventional sushi creations. Shop owner Masao Yamazaki days his sushi is essentially an Edo-style. Yamami’s signature dish is pickled fatty tuna that is so tender it could be mistaken for meat. The tuna is dipped in hot water, then is left to pickle for a day and a half in garlic infused tamari soy sauce. It is served on rocket salad dressed with white balsamic vinegar and olive oil. The key to creative cuisine is having fresh ingredients, which is what Yamazaki is all about.
