By day, Saburo Ramen is a typical neighbourhood noodle joint, but at night, it transforms into Ebi Ramen Genkai, exclusively serving up shrimp ramen to hungry Tokyoites.You’ll find two types of noodles here: the standard ebi ramen, which is made up of a mixture of clear chicken broth, shrimp flavoured oil, and the shop’s speciality shrimp sauce, giving it a unique and addictive flavour. The ebi abura soba is prepared with the same shrimp sauce and oil, butcomes with thicker noodles. Both bowls are topped with two slices of house-made chicken ‘chashu’, seaweed, and a generous amount of dried baby shrimp. Takeout costs an extra ¥100 for the container, or you can bring your own.
