The company behind Hawaii’s Morning Glass Coffee and Cafe has opened this sustainable café in Tokyo. It’s named after owner Eric Rose, who was also one of the founding members of Starbucks Japan. The café, on Aoyama-dori in Omotesando, serves simple, yet distinctive dishes produced by Rose himself.
You’ll find worldly cuisines like the traditional North African breakfast shakshuka, Korean soulfood kimchi noodle pancake and a shrimp po’ boy sandwich inspired by Louisiana. On weekends and holidays, treat yourself to a grilled ahi burger, which is a minced tuna patty sandwiched between two pieces of flatbread.
The brand is passionate about being sustainable, so naturally, the menu items were created to reduce as much waste as possible. The straws are made out of sugarcane, takeout containers are all biodegradable and the staff T-shirts are made from 100 percent cotton.
