If you’re overwhelmed by the range of ramen in Shinjuku, head to Ichiran just outside Shinjuku Central East Exit for a straightforward and delicious  bowl of noodles. You can’t go wrong with the classic Fukuoka-style tonkotsu pork broth ramen, simply topped with a thin slice of chashu pork, scallions and their hiden no tare, a spicy red sauce that gives the dish some extra oomph. The richness of the soup, thickness of noodles and spice levels can all be altered to personalise your bowl. Ichiran  is popular for its cosy ‘flavour concentration booths’ each of which only fits a single person, making it a popular destination for solo diners. This location is one of the few with a cashless vending machine for purchasing your ramen, so don’t worry if you haven’t been to the ATM lately.
