Once you get past all the ordering choices – red or white pork broth; noodles soft-cooked, medium or al dente; with or without chashu pork – you can settle in and appreciate all the little touches that make Ippudo different from other ramen shops. The layout is simple and open, with lots of plain wood; you can add your own condiments (spicy beansprouts, sesame seeds and garlic that you grind yourself); and there are unlimited pots of rooibos tea to quench your thirst.
