New York Grill Meets Gramercy Tavern

Michael Anthony's work at the upmarket Gramercy Tavern in Greenwich Village earned him the James Beard Foundation award for Best Chef in New York City earlier this year, but he's particularly sensitive to the demands of Japanese diners: he earned his chops working at a French bistro in Roppongi. Anthony makes a splashy return to the city this month, with a four-night stint at the Park Hyatt's New York Grill. The ¥18,000 'New York Grill Meets Gramercy Tavern' menu (which you can read here) features dishes such as smoked trout with sunchoke puree and pickled onions, and beef sirloin and short rib with carrots, parsnips, chestnuts and black garlic – all, no doubt, demonstrating their creator's attention to seasonal, well-sourced ingredients.
