A veteran of the twin-Michelin-starred Koju in Ginza and chef Toru Okuda's much-vaunted French outpost Okuda Paris, Shinji Ishida broke out on his own in June 2016 with this small but slick restaurant that specialises in the ingredients and recipes of Ishida's home prefecture of Tokushima. One private room and two tables are available, but as usual, this sort of upscale Japanese cooking is best enjoyed at the counter. Veteran sommelier Yasuhide Tobita has taken on the role of manager here, so his touch is predictably present all over the wine and sake lists. Book a table here before the word gets out – this one's high on our list places to try in summer 2016.
