Sophie at Edition has recently undergone a revamp, transforming into an authentic Italian trattoria serving carefully crafted dishes rooted in time-honoured culinary traditions while showcasing produce sourced from both Japan and Italy. The kitchen is led by executive chef Marco Violano, who hails from Puglia, alongside executive sous chef Toru Hirakawa. Together, the pair have brought the best of Italy’s warm, soulful cuisine to the heart of Tokyo through a menu featuring classic dishes alongside a selection of seasonal creations.
Highlights from the menu include beloved antipasti such as burrata with tomatoes, basil and tangy balsamic sauce, warm eggplant parmigiana, and Vitello Tonnato with thinly sliced veal, tuna sauce and crispy capers. For pasta, don’t miss the Maltagliati Funghi e Salsiccia, which pairs free-form pasta with a rich seasonal mushroom and sausage sauce, or opt for the classic Rigatoni all’ Amatriciana. Larger plates are ideal for sharing, including the decadent Ossobuco with saffron risotto and the Cotoletta alla Milanese, a crispy veal rack accompanied by a peppery rucola salad.
If you are visiting with a larger party, the best way to experience the cuisine is by ordering à la carte. Lunch and dinner set menus are also available, offering three- or four-course lunches and four- or five-course dinner options. A chef’s tasting menu featuring six to seven dishes can also be arranged for dinner (advanced reservations required).
The restaurant also boasts an exceptional Italian wine collection designed to complement the cuisine, featuring everything from classic labels to rare boutique producers renowned for their craftsmanship.
