Now located on the first floor of the Ark Hills South Tower after moving from Akasaka, Saito is perhaps Tokyo's most highly-rated sushi joint right now – and yes, that's including Sukiyabashi Jiro. With counter seating and an owner who keeps a keen eye on each of his customers to serve up sushi with perfect timing, the restaurant is a clear favourite of Michelin director-general Jean-Luc Naret, who was quoted as saying that he ‘wanted to make this place my own’.
