Time Out says

With extensive experience in Tokyo’s sushi scene and at acclaimed restaurants in Seattle, Hong Kong and New York, owner and head chef Michikazu Yoshida brings a refined mastery of Edomae sushi to the table at Sushi Waku. Well-versed in the dietary preferences and cultural nuances of international diners, chef Michikazu and his team offer service in English as well as Japanese, creating a welcoming atmosphere where sushi transcends language.

Hailing from Fukushima, chef Michikazu seasons his shari rice with red vinegar sourced from his home prefecture, adding a distinctive regional touch. Guests can enjoy curated sake pairings featuring select bottles from Fukushima (starting at ¥5,500), perfectly complementing the seasonally changing omakase.

The omakase costs ¥22,000, with sake pairings available from ¥5,500. Reservations are possible through Tablecheck.
