This sanuki udon joint in western Shinjuku is run by Kazutoshi Tao, chief of an udon aficionado club, and gourmet columnist Masahiko Katsuya. The noodles here are handmade in-house by expert noodle makers from Kagawa, known as the 'udon prefecture'. The restaurant is self-service, so you pay as soon as you've chosen your udon, toppings and sides, and there are numerous options allowing you to create your own favourite version of sanuki udon.
