Hokkaido-born café Tsubaki Salon serves fresh hotcakes in Ginza all day. Its signature hotcakes are made with just four simple ingredients – Hokkaido flour, eggs, beet sugar and salt – giving them a fluffy texture that goes well with any topping.
While a simple dollop of cream and a drizzle of syrup would suffice, it’s worth going all out with the hot cakes. Get one that’s served with bananas, a choice of chocolate or caramel sauce, Hokkaido whipped cream, milk blancmange and milk gelato (¥1,960). The decadent Noir Chocolate (¥2,040) looks tempting, too, as it comes with chocolate pudding, raspberry sauce, chocolate shavings and marbled chocolate whipped cream.
It’s not all sweet, though. Tsubaki also has a savoury hotcake that’s good for brunch. It’s topped with mashed potatoes, potato cream, bacon, salad and a side of – you guessed it – more potatoes (¥1,960). You’ll even find a hotcake set that comes with bolognese sauce (¥1,960).
