Served in sashimi, grilled, steamed and sushi form, the uma at Umaebisu has nothing to do with the suspicious pork/beef replacement found in ready-made frozen meals all across Europe a couple of years back – this is top-quality, lean meat sourced from some of the country's most accomplished farmers.
