Lovers of uni now have an extra reason to get lost inside the bowels of Shinjuku Station: opened in May 2017, this specialist eatery churns out sushi and other utterly uni-fabulous dishes. Try their rather innovative hako uni aburi, which is golden goodness served in a box and then attacked with a burner, or the mind-bending uni tempura. If you really feel the need to get into the nitty-gritty of uni knowledge, have the uni tabekurabe, a tasting set of three different types of sea urchin. And if you prefer some other seafood on the side, check out the kaisen oke chirashi, for which you can choose either regular white or red (with red vinegar) sushi rice as a base.
