Inspired by New York's salad bars, WithGreen, ex-banker Tomohiro Takefumi's tribute to American-sized bowls of greens and proteins, opened its first restaurant in Kagurazaka last year and now expands into the gourmet gauntlet that is Ginza. Having set up shop on the second basement floor of the newly renovated Marronnier Gate complex (formerly Printemps Ginza) in March 2017, it's certainly looking at a promising niche: after all, these streets aren't exactly known for their wealth of healthy and affordably priced lunch spots. As we've come to expect from WithGreen, the voluminous salads are made with veg sourced only from Tomohiro's most trusted farmers and topped with meats (or not) and brown rice. In a further nod to the Big Apple's pioneers, these figure-friendly mixtures can be ordered as is or customised to your liking with more than a dozen green toppings, ten condiment options and seven kinds of proteins.
