At first glance, No. (read as Number One, and produced by Onigashima) looks like any other patisserie or cake shop in Tokyo. However, once inside, you’ll discover this Ginza store’s unique take on cake and dessert. It’s known for taking fresh seafood and rice and crafting them into beautiful cakes rather than nigiri sushi or handrolls.

Miniature sushi cakes, which are ideal for one person, start at ¥594 and they come in circular and cube shapes. You can also get four or seven pieces of the minis (depending on the shape) and combine them into a whole cake. Topping options include tuna and negitoro (minced tuna with onion), sea bream and tuna, salmon with salmon roe, shrimp and scallop, as well as crab and uni (sea urchin roe). Whole sushi cakes that are made for five to seven people are also available for order. These would make a great alternative to your usual birthday cake, with prices starting at ¥4,860.

The shop has recently added a sushi parfait (¥1,350) to its menu. This stacked concoction offers colourful layers of sushi rice, tobiko (flying fish roe), cucumber and raw seafood toppings including salmon and tuna.
