On The Umami

All things umami are now in focus on the fifth floor of Shinjuku's Marui, where this dashi (broth) specialist set up shop in November 2017. In addition to convenient dashi packs, you'll find seasoning mixtures for chazuke (rice with green tea), special types of soy sauce and much more. We like the pourover soup service, where they make you a cup of soup 'hand-drip' style with chemical-free (and caffeine-free) ingredients. You can sip the dashi right there or get it to go – an alternative for post-lunch coffee, perhaps?
