This butcher shop near Yoga Station specialises in exactly one thing: top-quality wagyu. Most of their beef comes from Kyushu and Shikoku, but the cowboys seem to not have a preference for any particular region – it just has to be good. Their wares are sold by by the part, with anything from mainstays such as chateaubriand and sirloin to more unusual cuts such as lower thigh (kamenoko), lower shoulder flank (misuji), rib cap/small end rib roast (maki) and top shoulder (tonbi) on offer. And they won't exactly be stuck with stacks of unsold, pre-cut slabs of meat, as the cuts are only made after you've placed your order. If you're looking for a larger piece (think a massive block) but don't fancy carrying the entire thing home, try their 'meat-keeping' service, which lets you store your pound of flesh at the shop.
