Ever wondered what was that slice of pink and white swirl on top of your udon or ramen? It’s a type of kamaboko, a traditional Japanese food made from fish that is pureed into a paste, shaped into a log, and then steamed until firm and light. It has a delicate flavour and is a common snack paired with sake. So if kamaboko alone isn’t enough to persuade you to a festival, then over 100 varieties of sake from 17 breweries will. All sake and kamaboko come from Toyama Prefecture on Japan’s west coast, and are both specialities of the region.
