Congratulations are in order – a new batch of British restaurants have made it into the Michelin Guide, one of the most trusted hospitality lists in the world.

Michelin inspectors roam the nation all year long, anonymously eating at hundreds of restaurants and judging them on their mastery of flavour, quality of produce and consistency. If a restaurant impresses inspectors, they recommend it in the Guide. While it’s not quite as prestigious as getting a Michelin star, a spot in the guide is certainly nothing to be sniffed at. In September, 16 restaurants across the UK were deemed worthy of recommendation.

In its announcement of the new additions, the guide gave a special mention to The Free Company, a farm restaurant in the village of Balerno on the outskirts of Edinburgh. The guide praised it for its ‘detailed, flavoursome dishes using ingredients from the farm’ and added that the team’s genuine sustainable ethos is ‘clear to see in the house-made charcuterie and ‘scrumpets’ made from vegetables many kitchens would discard.’

Elsewhere, Manchester’s Climat, which features on Time Out’s list of the city’s best restaurants, earned its spot in the guide three years after first opening. The rooftop restaurant hides on the eighth floor of an office building in Manchester city centre. Michelin praised it for its ‘well-executed dishes’ and ‘carefully curated’ wine list ‘deftly mixing traditional and modern styles’. In her review of Climat, Time Out contributor and Manc local Kelly Bishop : ‘From playful signature snacks like hash browns with lemony taramasalata, billowing gougeres and retro vol au vents to big meaty cuts like dry-aged sirloin with dulse hollandaise, there’s a lot to love here.’

Sebb’s, another Time Out favourite, also made the cut. The underground spot opened in Glasgow last October with a dedicated cocktail kitchen, a rotating lineup of live musicians and DJs and food cooked over flames. Time Out contributor Olivia Simpson went to try it out earlier this year, declaring it Glasgow’s ‘top new date night spot’. The Michelin Guide said: ‘The menu happily ignores international borders, offering up everything from Turkish lahmacun to Brazilian-style picanha steak, via tandoori trout and jerk-spiced pork belly. Each one bursts with flavour and generosity thanks to the skill of the chefs.’

Six of the newly added restaurants came from London – you can read more about those here. See below for the full list of newly recognised Michelin Guide restaurants in the UK.
