Ever wanted to know what it's like on the other side of the bar? We asked some of New York's finest bartenders to get the inside word on the industry—and ended up hearing some pretty wild stories along the way.

Each of the bartenders we interviewed for this series are from venues who were featured in the prestigious Time Out Bar Awards in 2018. You can check out the full list of winners and runners up here.

This time, we got Jacob Tschetter from Hudson Whiskey to chat with the crew from The Aviary NYC, which was awarded Best New Bar and Most Creative Drinks.

Why we love The Aviary NYC
Chicago import The Aviary NYC, stationed on the retro-futuristic 35th floor of the Mandarin Oriental, brings the same attention to detail and sense of wonder as the original location. Break out your camera, as every cocktail is an interactive spectacle, with smoke, fire, changing colors or some combination of the three, as in the aptly named Science A.F., a pyrotechnic spin on a Penicillin. Under the leadership of Micah Melton, the bar delivers the kind of experience that you replay in your dreams and conversations for days afterward.
