It’s official: the summer heat is well and truly here, which means Vancouverites are on the hunt for a tasty dish to cool down with.

Look no further because Beaucoup Creamery at Time Out Market Vancouver is dishing out butter soft serve (yes, you read that right) and it tastes like summer in a bowl.

If that wasn't tempting enough, the menu also features a French butter cone to go with your soft serve which you can order in either original or guava flavour for a bit of a kick. Plus, there’s also a crunchy and creamy le grand croustillant glacé ice cream sandwich when you’re ready for seconds.

Where is the best ice cream in Vancouver?

The masterful creations are the work of brother-sister duo Betty and Jacky Hung who have brought the concept exclusively to Time Out Market Vancouver. The dessert counter is one of their two ventures at the Market, the other is an offshoot of their Vancouver-based bakery Beaucoup.

Time Out Vancouver spoke with one half of the duo about their two Time Out Market Vancouver stalls and how they came to be.

What's the history of Beaucoup?

We started in 2011, specializing in French-inspired pastries. It’s a family business, Betty is my sister and she’s the executive chef – so the brain behind all the pastries and goodies. I help out with the front-of-house aspect.

We’re well known for our croissants, our butter croissants. Another thing we’re popular for is our Kouign Amann – we were probably one of the first to popularise it in Vancouver. In the past couple of years we’ve done more Asian-inspired flavours, so one dish was a Peking Duck croissant that we did in collaboration with a Chinatown foundation in 2021. While we have a very traditional French technique, we do infuse a little bit of Asian flair from time to time.

What's special about Beaucoup at Time Out Market Vancouver?

The Beaucoup brand and Time Out Market have a lot of similarities. At Beaucoup, we celebrate a lot of multiculturalism. We use a lot of different spices in our pastries. We have some exclusives for Time Out, for example we will have a deep-fried Hong Kong-style French toast.

For Beaucoup Creamery, the concept is exclusive to Time Out and it’s a place where we’ll do soft serve with a flair. We'll be able to bring a lot of creative space for us to try new things and open up a different genre of dessert for us to explore.

What’s a dish everyone should try from Beaucoup and Beaucoup Creamery?

Definitely the butter dip soft serve at Beaucoup Creamery. And definitely the Kouign Amann Golden Fried French Toast.
