Amuse Arctic Char Tacos: Kohlrabi, shiso, tempura, kumquat scallion sauce Kumquat Witbier 1st Course Corn Meal Fried Oysters: buttermilk green garlic dressing, Wrecking Bar barrel aged hot sauce, fresh saltine crackers Berliner Weisse 2nd Course Ruben Beer Sausages: stuffed with baby Swiss and fermented kraut, Wreck sauce Dutch Master Smoked Belgian Red 3rd Course Goose Egg & Soppressata: house cured soppressata, White Oak Pastures goose egg, spinach, Pain au Levain, Natures Harmony Cherokee Rose cheese Victor IPA 4th Course Porchetta: Spicy drunken pig foot jus, dried chiles, burnt scallions Sow Your Wild Oatmeal Porter Dessert Spent grain Madeline cake with peanut brittle and micro cilantro Choco Mountain Imperial Breakfast Stout (with a little something extra - our Mexican spices) Seating is at 7 p.m. Arrive before for hors d'oeuvres.
