Maybe Sammy – one of the world’s best cocktail bars, known for its old-world glamour, whimsical experience (hello, bubbles), tip-top pink-blazer-wearing bartenders and all-round good times – has created a super-special cocktail, now exclusively available at MGallery hotels around Australia.
Designed to encapsulate MGallery’s passion for mixology, storytelling and sensory journeys, the cocktail is called Bush Bloom – and she’s a beauty. Inspired by native Australian ingredients, Bush Bloom is a pretty, summery drink made with honey mead, vodka, Davidson plum, raspberry and lemon myrtle, and it’s served with a story card sharing the inspiration behind the drink. It tastes like sun-soaked, barefoot road trips around the country with your best friends – and not having anywhere to be.
And the best part? You don’t need to visit (and sometimes line up at) The Rocks to taste it. Bush Bloom is now served at MGallery hotels across Australia, including the beachfront babe Manly Pacific Hotel Sydney; the CBD’s heritage-listed boutique spot The Porter House Hotel Sydney; luxurious and stylish The Playford Hotel Adelaide; the golden, shimmering Hotel Chadstone Melbourne; scenic nature escape Fairmont Resort Blue Mountains; and the five-star rural go-to The William Inglis Hotel Warwick Farm.
To celebrate the launch, Maybe Sammy hosted a one-off pop-up and in-person staff training at Luma Restaurant & Bar at The Playford Adelaide MGallery – to the delight of the team and Adelaide locals.

MGallery has also teamed up with Citadelle Gin to create three fab cocktails, also now available at its luxe hotels. There’s the Crystal Diva – an elegant ode to the classic Gimlet made with Citadelle Gin, jasmine and lemongrass cordial, fino sherry and orange blossom, garnished with a white chocolate shard; the Timeless Negroni – a fun riff on the classic made with Citadelle Gin infused with sandalwood, red vermouth and pineapple-and-pandan bitters; and the Honey 75 – a celebratory tipple that sees Citadelle Gin fat-washed with local olive oil and paired with verjus, salted local honey, orange and cardamom syrup, then finished with Pommery Champagne.
