If the Japanese phenomenon known as shabu-shabu has yet to make a splash in Boston, it's no fault of this hot-pot spot, stylish by Chinatown standards. Both the range and quality of the ingredients at your disposal are impressive, and the pains the friendly staff take to explain the cooking process are commendable. The ritual of dipping, say, ribbons of rib-eye with discs of lotus root into tea-like Chinese herbal broth can be so mesmerising that the meal it leads to just seems like a bonus.
