Part of our work is to honor flavors. Today, May 13, the entire world celebrates International Hummus Day, and we didn’t want to miss out. It’s a dish of Arabic origin, primarily made with chickpeas, though it has its variations.

It’s a paradise for pasta lovers and Italian cuisine enthusiasts. The menu is vast, and we found our star dish hidden in one of their "Antipasti e Insalate." Perfect for a light lunch or as a starter before a heartier dish, the Milano Brera is a salad with yamani rice, oven-baked carrots, Brussels sprouts, grilled zucchini, lemon chicken slices, chickpea hummus, and eggs.

The texture of the hummus is incredibly smooth and works as the perfect binding element to bring together the rest of the ingredients, which can be crowned with the intense flavor of an Imperial IPA with citrus notes. For dessert, we recommend a tiramisu or a coffee affogato.

2. Demuru - Cariló

For a weekend getaway or for those who decide to take late vacations, this Cariló restaurant is a must. The menu, designed by Pedro Demuru, gives a special place to hummus, as it accompanies one of the most requested dishes on the menu, the catch of the day. The mix of flavors between the intensity of the fish and the smoothness of the hummus results in a perfect balance, crowned with the acidity of lemon in both preparations.

With the sea as the protagonist of both the landscape and the kitchen, this dish is served with quinoa, vegetables, carrot hummus, and mango vinaigrette. If the day is sunny, we can’t think of a better pairing than an Imperial Roja, as its caramel and coffee notes balance the spiced flavors of the vegetables.

3. Nipoti - Mendoza

Nipoti, in Mendoza, offers a healthy, fresh, and abundant menu with some Italian recipes. Actor Gastón Dalmau co-created a super varied menu.

Hummus is present in three of their dishes. Among the antipasti, those who want to try our main flavor can choose the pumpkin croquettes, which come with beetroot hummus and alioli (individual). For those who want to share, they can opt for a platter that, in addition to croquettes, includes cheese sticks, fried olives, Caprese empanadas, and pair it with a fresh and smooth Imperial Golden. Among the main dishes, it’s included in the Mediterranean stir-fry with sautéed chicken, vegetables, pears with pesto, and beetroot hummus.

4. Don Lobo - Santa Fe

This is an innovative place. It’s a restobar that shares space with a barbershop, a specialty coffee shop, and a showroom for leather goods and clothing. Of our list, it’s the only one that serves hummus in sandwiches. It’s an Arabic bread sandwich with hummus, arugula, mushrooms, crispy onions, and shredded cheese, one of the veggie options on the menu. Being in Santa Fe, it’s impossible not to think of beer as the perfect pairing. We recommend an Imperial APA, with an intense and hoppy flavor to enhance the tastes.
