Cape Town diners will have just four nights to experience Amura’s most ambitious culinary collaboration yet.

Ángel León and Alain Roux will bring French tradition and Spanish maritime cooking together during a four-night Amura residency this August. From 13 to 16 August, Roux will take over the kitchen at Amura by Ángel León, the ocean-inspired restaurant at Mount Nelson.
Fun, if slightly awkward, fact: Africa has no Michelin-starred restaurants because the Michelin Guide does not currently operate on the continent. Yet, several Michelin-starred chefs have made it their business to bring their culinary expertise here, and to Cape Town in particular.

This latest collaboration brings together two chefs associated with no less than six Michelin stars at their flagship restaurants.
Known as ‘The Chef of the Sea’, León holds three Michelin stars at Aponiente and another two at Alevante in Cádiz. Despite receiving offers worldwide, he chose Cape Town for Amura, his first restaurant outside Spain, which launched in December, last year.
His boundary-pushing cooking transforms marine plankton, underused seafood and other ocean ingredients into contemporary fine dining.
“Cooking alongside Alain is a real privilege. We come from different culinary traditions, but we share the same respect for great produce, craftsmanship and hospitality. Bringing those worlds together at Amura, in Cape Town, makes this collaboration truly special," says Chef Ángel León.
Roux, meanwhile, is chef-patron of The Waterside Inn, the acclaimed British restaurant that has retained three Michelin stars continuously since 1985. He is also the custodian of the Roux family’s formidable culinary legacy, which helped reshape British fine dining.
Roux will lead the first three evenings, presenting a six-course tasting menu rooted in classical French technique and made with South African ingredients. South African chef Wandile Mabaso will also join the kitchen throughout the residency, alongside Roux’s culinary instructor, Michael Nizzero.
The menu includes Roux signatures such as truffle croque monsieur; seared scallop with sweetcorn, lime and vadouvan sauce; and a warm raspberry soufflé that has appeared at The Waterside Inn for more than half a century.

The residency culminates on August 16 with a one-night-only Four Hands Dinner pairing Roux and León.
The menu will bring together Roux’s classical French cooking and León’s new-wave Spanish interpretation of the sea. Highlights include pan-fried lobster medallion with ginger-flavoured vegetables and white port sauce, followed by León’s signature plankton risotto.
More than a Michelin-inspired residency
ForLeón and Roux, the residency is an opportunity to unite different culinary traditions, exceptional local produce and a shared passion for hospitality.
The residency’s impact will also reach beyond the dining room. Ahead of the event, two Amura chefs will spend two weeks training at Aponiente in Spain, taking León’s pioneering approach to marine gastronomy back to Cape Town.
KLM is sponsoring their flights as part of what Air France-KLM’s Southern Africa country manager, Wilson Tauro, describes as connecting “cultures, traditions and experiences through travel”. The support also follows the airline’s recent agreement with Cape Town Tourism to help promote travel to the city.
With just 40 guests per night – and 160 seats across the entire residency – the dinners are deliberately exclusive. But the longer-term value suggests an exchange of knowledge, the development of local talent and Cape Town’s growing profile as a destination for global culinary collaboration.
Each evening begins with a Moët & Chandon welcome drink, followed by a single dinner sitting.
