At La Terraza, it’s all about the fish

The restaurant at Grande Real Villa Itália has a new concept up its sleeve: Curadoria de Gosto, a special menu entirely dedicated to fish.

But what exactly is Curadoria de Gosto? Chef Luís Sousa explains: this new concept “comes from a desire to look at each ingredient with time, respect and curiosity”. He adds that, with each changing season, a single product will be chosen and “allowed to speak for itself”. The aim is clear: to celebrate regional ingredients, honour their seasonality and explore the different ways they can be interpreted in the kitchen.

“More than creating dishes, we want to tell the story of each ingredient and show how, when treated with precision and simplicity, it can reveal remarkable depth of flavour.” In this first edition, the spotlight is on fish, with a focus on pairing the flavours of smoke with the sea.

We kicked things off with the marinated fish of the day with citrus, sweet potato and seaweed salad (€23) – a fresh, sunshine-ready dish. Perfect for sharing between two as a starter… or keeping all to yourself, if you’re feeling greedy.

Next up was the chef’s favourite: john dory noisette with oyster foam and braised sweetheart cabbage with smoked paprika (€31). Expectations were high after the recommendation – and, as hoped, it didn’t disappoint. The deeper, more robust flavour of the cabbage played beautifully against the delicacy of the fish, with each bite immediately calling for the next.

The oven-baked sargo with smoked fennel and cockle xerém (€29) was another highlight. The bold, savoury notes of the xerém balanced the flaky fish, while the fennel brought a welcome touch of acidity.

For dessert, we ditched the diet and went for the vanilla pastéis with salted caramel (€9). The contrast between the silky cream and the crisp pastry makes for a spot-on ending.
