This morning, Grant Achatz's Next Restaurant announced its menu themes for 2015. First up is Next: Bistro, which runs January to May and will focus on the “casual side of Parisian dining culture.” It’s Next’s second trip to France, as it opened the restaurant with the Paris 1906 menu. And this does indeed sound like Next’s most casual menu, as it'll have a five- to seven-course menu written on a chalkboard, which will change weekly, and it’ll also offer specials and supplements each day.

Next: Tapas will run May to September, and include a few dozen Spanish small bites, with modern and traditional takes on the cuisine. If it’s nice out, Next will transform its sidewalk space into a patio. It's also its second foray into Spanish food, as Next did an El Bulli menu in 2012.

Next: Terroir, a wine-focused menu, runs September to December, and will pair dishes with wines from the same terroir. Expect 15 courses with 10-plus vintage wines.

This year, prices are more moderate. Prices for Bistro are $80–$120 per person, $70–$110 per person for Tapas and $295–$355 per person for Terroir, which includes food and wine.

Tickets for season ticket holders are available starting Thursday and to the public on Saturday.
