When Athina Papas opened Santorini Estiatorio in 2012, she was looking to put the Greek back into Detroit’s Greektown. Papas breathed new life into the corner space, working closely with designers to fill the restaurant with whimsical, nautical decor and with the kitchen team to form a menu filled with classics: saganaki opa (Greek kasseri cheese flambeed in brandy), eggplant moussaka drenched in creamy bechamel and bone-in lamb shank braised in white wine and herbs.

"The highly visible location on the corner of Monroe and Beaubien is even more so since the handsome redo of Mosaic inside and out into a blue-and-white Greek island-themed restaurant. Santorini serves an extensive menu of dishes, including appetizers of tzatziki and marinated octopus, plates of whole fish baked in sea salt, lamb chops, and lemon chicken, bringing more Greek to a Greektown that seemed to have lost touch with its traditional roots of late." -review from HOUR Detroit
