Opera fanatic Javier Otero converted this charming 1920s mansion into a restaurant and filled it with singing waiters - conservatoire students or artists just starting out on their careers. It's a surprisingly fun way to eat delicious Navarran food: the soprano hits a high note, you savour the solomillo with thistles and artichokes, and the whole experience elicits goosebumps. Javier's troupe is so good, in fact, that it is regularly invited to perform at festivals. And the food, made using fresh ingredients from Navarra, hits another high note. Reservations are essential.
