When it comes to rooftop scenes on Miami Beach, Watr has been the spot to beat since it first opened nearly a decade ago. Though its menus have evolved over the years, the eco-conscious, Asian-inspired theme remains. And while it’s open daily from 11am, Watr is unquestionably a bar first, and a restaurant second. The beats generally stay on the chill side, but turn up for regular happenings, like the weekly Soul Sessions on Thursdays, and special events like the decadent New Year’s Eve parties. Reservations are required for non-hotel guests.
The vibe: Boho-chic, heavy on the chic, with crowds dressed to impress. A rustic central bar clad in reclaimed beachwood is offset by mature trees wrapped in bulb lights, plush, freshly renovated lounge seating and unobstructed 18th-floor outlooks to the Atlantic Ocean.
The food: In line with the 1 Hotel’s mindfulness ethos, the Japanese-influenced fare here is made with ingredients consciously sourced from local farms and ethical ranchers, like organic produce from Florida’s Lady Moon Farms and “nature-led” Australian Wagyu beef from Westholme. The raw bar, sushi and seafood offerings are extensive.
The drink: Cocktails are divided into sections such as “Effervescent + Crisp” and “Ode to Japan,” emphasizing refreshing ingredients like ginger and yuzu combined with Japanese whiskey and sake. The carefully curated wine list focuses on sustainable winemakers from around the world.
Time Out tip: Mind the dress code: by day, a relaxed-casual post-beach outfit works just fine, but nighttime calls for a “chic-casual outfit” to ensure entry. When in doubt, dress like you’re going to the year’s hottest white party.
