Welcome to Food Envy, where we’ll highlight different dishes from Time Out Market Miami that we think you’re going to love—partly because we do. This week, we’re digging a Peruvian riff on meat and potatoes at 33 Kitchen.

RECOMMENDED: Guide to Time Out Market Miami

We’re proud members of the meat-and-potato fan club. We stan for the unpretentious combo of beef and starch that fills our bellies and satisfies our hearts. The thing we love most about the basic dish is all of its hidden potential. Meat and potatoes can be plain and expected or they can be elevated and exciting like the kind chef Sebastian Fernandez is serving up at 33 Kitchen inside Time Out Market Miami.

Now, don’t go searching the menu for the said dish because you won’t find it. Fernandez’s is a Peruvian take with perfectly grilled churrasco steak served over crispy, thick-cut yuca fries with a side of steamed white rice. It’s chef’s version of Peru’s popular lomo saltado, a traditional stir fry that generally combines marinated strips of sirloin steak with sauteed onions, tomatoes and french fries. If you’ve had this before, you’ll know the fries absorb most of the cooking liquid and turn soggy. But not at 33 Kitchen, where it’s served deconstructed so all the flavors and textures remain intact.

33 Kitchen’s churrasco saltado is meat and potatoes for the Instagram age. Where the original is brown, wet and unphotogenic, this perky, symmetrical plate was made to be photographed.
