Solei Beach Club brings Spanish Riviera vibes, seafood towers and frozen cocktails to South Beach.

As if Miami needed another excuse to spend an entire afternoon parked beside a pool with a frozen cocktail in hand, here's one anyway.
Solei Beach Club has officially opened inside the recently renovated Kimpton Surfcomber Hotel, bringing a Mediterranean-inspired beach club to an oceanfront stretch of Collins Avenue that's already packed with places to see and be seen. Open to the public, the new venue leans into the fantasy of a Spanish seaside escape with thatched palapas, plush lounge seating, DJs and ample rosé—an obvious fit for South Beach.
The food comes from executive chef Gastón Javier Sanchez, who draws inspiration from both Mediterranean cuisine and South Florida ingredients. "My inspiration for the Solei Beach Club experience is rooted in the spirit of the Mediterranean—its rich diversity, vibrant culture and timeless sense of enchantment—fused seamlessly with the energy and flavors of South Florida," Sanchez said. "It's about bringing that global coastal essence right here to our Miami Beach backyard, creating something that feels both transportive and deeply local."
The menu starts with a substantial raw bar featuring oysters, ceviche, octopus carpaccio and a towering "Seafood Colosseum,” packed with oysters, Caribbean lobster, P.E.I. mussels, Quahog clams and ceviche, with optional caviar or stone crab upgrades. Smaller plates include pintxos, shrimp ajillo and chicken drumettes glazed with Maltese lime, while larger dishes range from shrimp and chicken paella to sesame-crusted salmon with tahini, cauliflower and pomegranate. (If your idea of beach food is something handheld, there are also lobster rolls and pizzas.)
Drinks are a major part of the equation, with signature cocktails including the mezcal-and-tequila Spicy Señorita, an Italian Margarita made with Campari and Cointreau and the frozen Passion Du Solei. The club also pours its own branded DAOU rosé, which takes center stage during a daily 3 pm ritual featuring $5 glasses, a live DJ and—because this is South Beach—a bubble shower.
Solei Beach Club is located at 1717 Collins Avenue inside the Kimpton Surfcomber Hotel. It's open daily from 11 am to 5 pm, with the bar serving until 6 pm. Guests can also book packages through ResortPass.
