Carrot Express has been synonymous with healthy eating since its first location opened in South Beach nearly 25 years ago. Since then, chef and owner Mario Laufer has expanded the winning concept—fresh and wholesome salads, wraps and sandwiches—to Sunny Isles and Midtown Miami, where classics like La Bomba and spinach pie melts still get plenty of praise.
