Welcome to Food Envy, where we’ll highlight different dishes from Time Out Market Miami that we think you’re going to love—partly because we do. This week, we’re feeling healthy and falling hard for Coyo Taco’s delicious salad bowl.

Tacos are the food we can go for nearly every day, partly because the tortilla-filling combinations exist in so many variations that options are endless. The only thing to come between us and our tacos? A diet. But when our tightening belts signal us to pump the breaks on future taco cravings, we turn to the next best thing: the Coyo Taco salad bowl.

Essentially a taco without its shell, the bowl satisfies the urger to tear into something crunchy, meaty, spicy and decidedly Mexican. Plus it’s better on the ego than ordering a #sadsalad. All bowls start the same: a mix of crisp greens, crumbled cheese, a large scoop of guac, pepitas (toasted pumpkin seeds) and tomatoes. Then they’re topped with the protein of your choosing—carnitas de pato, pollo al carbon, cochinita pibil or a veggie mix with mushrooms. For anyone who loves sauce, the real fun begins at the toppings bar, where you can supplement the bowl’s spicy dressing with fresh salsa, tomatillo and lots of pico de gallo. 

The heaping bowls of goodness aren’t just a healthier alternative to the trio of tacos we want to crush, they’re also satisfying and tasty—and the guac topper is never extra.
