Where ‘sci-fi-inspired gastronomy soars to great heights’ – here’s why we named it our favourite place to eat

Food is a crucial part of the French cultural identity, so it’s no wonder that along with world-class art galleries, museums and general immaculate vibes, Paris has got some standout restaurants.
But if you’re visiting the French capital for the first time, the plethora of spots available can be a little overwhelming. That’s why we regularly update our collection of the city’s absolute finest places to eat, and as of spring 2026, we’ve selected a new number one.
The restaurant in question is Vaisseau, a swanky, futuristic space hidden away in Charonne, a neighbourhood in the 20th arrondissement, and Time Out Paris writer Aitor Alfonso awarded it five stars in a brand-new review. But, don’t go in expecting to find classics like escargot or French onion soup.
‘The dazzling procession of plates in the blind tasting menu shakes up convention before winning you over with its precision – even when it edges towards full-on sensory overload,’ he writes, ‘The chef’s sci-fi-inspired gastronomy soars to great heights without slipping into incomprehensible jargon, delivered with a level of exactitude that commands admiration. No doubt about it: something special is happening at this exact point in the culinary galaxy.’
Intriguing, eh? If you are after something a little more quintessentially French, our favourite bistro Le Baratan claimed second place on our ranking, but for the most romantic restaurant of all, opt for Septime, our-third place winner.
